Having graduated from the Cathal Brugha College of Catering, Paula has spent 30 years in the catering business, including restaurants renowned for their culinary excellence like Ashford Castle and The Ship in Dunmore East.

Her cooking has been acclaimed by the Bridgestone Guide, Walkers Ireland, Georgina Campbell and Theodora Fitzgibbon.
